Cheap nasty leather, mostly from India and Far East is tanned with what was called in England 'Pure'. you feed dogs white raw meat to get it. (I kid you not1) The other natural taning materail is Brain. And you wonder why Tanning wasn't allowed in most cities? 😣
For me it worked but I see your point.
Normally I first use moisturiser and then a grease treatment for waterproofing.
But then again I don't know everything about leather so am willing to learn.

Leather is skin.
What do you put on your skin?
Basically a after sun moisturiser, what you put on you after a sunburn or dry skin.
Don't use greasy stuff which repells water.
Moisturising is the trick. I learned this in a museum workshop.

Last Saturday we went to the plaque with a great niece of Blanchard after we went to visit Blanchard's grave.
I placed paper Poppy petals at the 7 graves from this Bomber, the 8th was Canadian and buried in Groesbeek.

If there isn't a specific amount of texturing then I'd advice to look at examples and use that as a guide.
Very fine sand should do the trick.

I rode the Race to the bridge from Renkum to Arnhem for the 1st time. I did ride from the Belgian border to Eindhoven.
Arnhem area is a tad hilly which made the ride way more tiresome than the flat drive to Eindhoven.
Riding as such shouldn't be a problem, even with the sliding pedals. Taking kit and Luggage is a bit more difficult.
I did find out going downhill with 70+ year old hardened rubber brake pads in the rain is allmost useless, especially when the rear brake gave out due to a loosened screw.
So to be short, you'd be mad and thets a GOOD thing!. Go fot it!
Do make sure you are visible for other traffic. A uniform is correct but camouflage on a bike with motorised traffic can get dangerous.
HiVis looks bad but may be the sensible thing to do.
Using a Original smock isn't a good idea, you may damage it and regret that.
