If the bank is intended to keep water out, does that mean it's an artificial island of some kind?

Impeccable logic Andy, but keeping water out is just a requirement for an occasional eventuality. So not permanent situation as say a stone built duck house :D

When you say it's circular does that mean that the apex of the stones is a the centre of the structure, or is it a ring (doughnut)?

Do you pour oil or something similar into the trench so when attacked it can be ignited to provide a defensive measure?

A lime kiln! Or at least if you heat large stones and then add water the result might well be bang, plus a load of gravel to use as base for roads and wapons pits.

The stones at the edge form a ring as it were. The diagram is a vertical bisection.
